Walnut & Banana Cake


I have the perfect cake for you ….. WALNUT & BANANA LAYERED CAKE …… moist layers of walnut cake with silky chocolate & walnut filling … fresh slices of bananas in between ….. all covered with more silky chocolate icing and ground walnuts.

Walnut & Banana Cake

Walnut & Banana Cake




  • 4 eggs
  • 2 cups Icing Sugar
  • 8 Tbsp Water
  • 3/4 cup Walnuts (finely ground)
  • 1 1/3 cup Flour
  • 1 tsp Baking Powder


  • 1 1/2 cup Icing Sugar
  • 1/3 cup Water
  • 3/4 cup Walnuts (finely ground)
  • 1 cup Butter
  • 50g Semi-Sweet Chocolate
  • 1 tsp Vanilla
  • 2-3 Bananas (sliced)

STEP 1: Preheat oven to 375F. Line large jelly pan with parchment paper.

STEP 2: In a large bowl beat together egg yolks with icing sugar and gradually add water. Beat until light.

STEP 3: In another bowl whisk together flour, baking powder and ground walnuts.

STEP 4: On a low speed mix flour mixture into wet mixture until well blended.

STEP 5: Beat egg whites until they form peeks and gently fold them into cake batter.

STEP 6: Spread cake batter evenly onto jelly pan and bake for 15-20 minutes or until done.

STEP 7: Remove from the jelly pan onto cooling rack. Cool for 10 minutes before removing the parchment paper. Then cool completely.


While the cake is baking prepare walnut and chocolate filling.


STEP 1: In a saucepan on medium high heat cook water and sugar until sugar is completely melted.

STEP 2: Turn heat to medium low. Add ground walnuts, chopped chocolate and vanilla. Stir until chocolate is melted. Remove from heat and cool completely.

STEP 3: Put cooled chocolate and walnut mixture into a bowl, add butter and beat until light and fluffy. Cool it down.


Cake Assembly:

STEP 1: Slice the cake into 3 or 4 even layers (depends how tall & long you would like it)

STEP 2: Assemble: cake – filling – bananas – filling – cake until you are done. Reserve some filling for icing the outside of the cake.

STEP 3: Ice the outside of the cake and cover with ground walnuts (about 1/2 cup of walnuts) or cover with chocolate.
