Good morning, my sweet friends!

I know ….. I know ….. it’s been a few days since I talked to you.

 

I do have a good reason, but first things first …… BREAKFAST ….. it’s early in the morning ….. my tummy is grumbling …… I feel like

big bowl of BANANA & HONEY OATMEAL with TOASTED HAZELNUTS and just a pinch of Cinnamon.

 

Doesn’t that sounds good?

I am not a breakfast cereal person at all …… would not eat cold cereal if you paid me, but give me a bowl of piping hot OATMEAL

loaded with goodness …. BANANAS …… NUTS ….. APPLES ….. and I am there.

 

So, why don’t you go make yourself a nice bowl of BANANA & HONEY OATMEAL with TOASTED HAZELNUTS …. come right

back and I will tell you the reason for my absence …..

…. good thing it takes only few minutes  for the BANANA & HONEY OATMEAL with TOASTED HAZELNUTS to be ready.

 

I love quick & delicious breakfast, don’t you?

Now to my absence …..

 

As many of you know my youngest boy was hit by an SUV while waiting for a school bus a year ago …. my oldest son witnessed the accident & thought he lost his little brother ….

Make a long story short …. my family has been trying to deal with many issues resulting the accident for over 12 months which took a huge toll on our physical & mental health.

 

We have to see many doctors & mental health professionals every week & last week was one of the worsts …..

… the result – both of my boys are gaining weight rapidly which is not helping the younger one with his recovery & it’s not helping the older one with his Type 1 diabetes

…. I am losing weight rapidly (the wrong weight) which is causing numerous health issues.

 

So, last week I said “ENOUGH” & I spent few days making plans …. organizing … talking to doctors …. buying exercise equipment & getting my family on the way to health ….

 

It will be hard few months, but we can do this & I will keep you posted about our progress!

 

 

Banana & Honey Oatmeal with Toasted Hazelnuts

Banana & Honey Oatmeal with Toasted Hazelnuts

 

This recipe makes 2 servings.

Ingredients:

  • 1 1/2 cup 1% Milk
  • 3/4 cup Quick Oats
  • 2 Tbsp Honey
  • 1 Banana (sliced)
  • 1/4 Toasted Hazelnuts (chopped)
  • Cinnamon

STEP 1: In a small saucepan heat milk on medium for 1 minute. Add oats and cook for another 5 minutes.

STEP 2: While the oatmeal is cooking get two breakfast bowls and pour 1 tablespoon of honey onto bottom of each bowl.

STEP 3: Divide oatmeal into two bowls. Top with banana, hazelnuts and sprinkle with cinnamon.

STEP 4: Mix it all together before eating. You can add little more honey or agave nectar on top if you like it sweeter.

My kids used to be cold cereal eaters, but I turned them into egg eaters with dishes like Prosciutto & Provolone Baked Eggs Breakfast Sandwich

and they also enjoy nice bowl of hot BANANA & HONEY OATMEAL with TOASTED HAZELNUTS.

 

So much tastier then bowl of dry cereal with cold milk …. I think.

    And I wish the best of luck to you. Remember last year you started your family weigh loss thing? Perhaps it’s time to restart that again =)

      Yes, Jamie! We started few weeks before the accident & had to stop. The boys are still not ready for such a program, but we will get there slowly.
