Happy Hump Day, everyone!
I can’t believe it’s already been a month since I shared with you a recipe from Surprise Recipe Swap or SRS for short.
This month I was assigned to make a secret recipe from Dessert Now, Dinner Later! blog written by Amber a culinary graduate.
It was such a hard decision because Amanda has so many mouthwatering desserts (my weakness) , but since I am trying to get my
family healthy again I thought it was a great idea to try dinner salad instead.
I founds recipe for delicious looking CAESAR PASTA SALAD & I was all over it.
CAESAR PASTA SALAD turned out perfectly ….. my boys loved it ….. I did however make little changes to fit our taste.
This is my version of CAESAR PASTA SALAD adapted from Dessert Now, Dinner Later!
Ingredients:
- 2 1/2 Tbsp Greek Yogurt (original recipe – mayo)
- 2 1/4 tsp Dijon mustard
- 2 garlic cloves, minced or roughly chopped
- 1 1/2 Tbsp fresh lemon juice
- 3/4 tsp white wine vinegar
- 1/4 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- 1/2 cup pure or light olive oil (not extra virgin)
- 1 1/2 cups Small Pasta ( uncooked)
- 2 heads romaine lettuce (torn)
- 5 Crispy Bacon Strips (chopped)
- 1 cup Cherry Tomatoes
- Parmesan Cheese
STEP 1: Prepare dressing by combining yogurt, mustard, garlic, lemon juice, vinegar, salt & pepper in a blender & process until smooth. With blender running on low speed, slowly pour olive oil in a steady stream just until fully incorporated. Place dressing in refrigerator until ready to use.
STEP 2: Cook pasta according to directions on package. Drain & then rinse the pasta under cold water until pasta is no longer warm. Drain thoroughly. Place pasta in a LARGE bowl.
STEP 3: To the bowl of pasta add torn lettuce, bacon, cherry tomatoes & Parmesan cheese. Drizzle with prepared Caesar dressing & toss lightly with salad tongs.
As I said I made little changes like using bacon & cherry tomatoes instead of croutons ….. Greek yogurt instead of mayonnaise …
skipping seasoning mix to coat the pasta, but the CAESAR PASTA SALAD was absolutely delicious ….

I love caesar salad. I never had it with bacon though.. which reminds me, I’ve always wanted to try out a rendition of BLT salad

I love BLT Salad. They have if on a menu in one of my favorite restaurants & I always order it
i am not a salald loving gal but i am intrigued by the use of yogurt in this caesar coz i do like yogurt. this would taste really good in tortilla wraps too i think….
I think this would be awesome in tortilla wraps. I must try it next time
