Good morning, my friends!
Another week is upon us …. another opportunity …. fresh start …. new adventure … new beginning ….
… I love to start my week on positive note …. so much better then having “the Monday Grumpies” …. don’t you think?
I had a wonderful weekend with family & friends ….. which means there was lot of yummy food involved …. most of it made from Italian family recipes .
One of my favorite pasta recipe FOUR CHEESE FETTUCINE WITH PANCETTA comes from my husband’s uncle Fred.
Uncle Fred has been making his Four Cheese Sauce for us for years ….. I was so happy when he finally shared his recipe with me few years ago.
As I said it was family & friends weekend so of course there was FOUR CHEESE FETTUCINE WITH PANCETTA being served as well….
…. the only thing missing was my sweet husband, but we will have to wait to see him few more weeks.
Today I am sharing with you my uncle Fred’s FOUR CHEESE FETTUCINE WITH PANCETTA (with little adaptation by me) & I hope your family will enjoy it as much as we do!
This recipe is for 3-4 servings.
Ingredients:
- 4-6 slices Pancetta (chopped)
- 1 Tbsp Olive Oil
- 1/2 Onion (finely chopped)
- 3-4 cloves Garlic (minced)
- 1 1/2 cup Half & Half
- 2 Tbsp Butter
- 2 cups Mixture of Asiago, Romano, Provolone & Parmesan Cheese (grated)
- Salt & Pepper
- 1lb Fettuccine (to be cooked Al Dente)
STEP 1: In a large skillet heat olive oil on medium. Add onion & pancetta. Cook until well done.
STEP 2: Turn the heat up to medium high. Add cream, butter and garlic. Simmer to reduce by one quarter or until it coats the back of the spoon.
STEP 3: Add cheese and stir to thicken as you like. Salt and pepper to taste.
STEP 4: Toss cooked Fettuccine into the skillet. Mix until all pasta is covered. Serve.
