Yes, we are getting closer & closer to Easter ….. that means one thing ….. it’s time for LEMON GLAZED EASTER SUGAR COOKIES!
Making EASTER SUGAR COOKIES is a tradition in my house ….. as well as decorating Easter Tree.
Month before Easter we cut few branches from Cherry trees …. put them in the water …. bake & decorate LEMON GLAZED EASTER SUGAR COOKIES ….. string ribbon through them …. decorate Cherry branches with Easter Sugar Cookies & Easter Eggs ….
…. by the time Easter comes around …. we have beautiful Cherry Easter Tree in full bloom.
Of course we always make enough LEMON GLAZED EASTER SUGAR COOKIES for eating and sharing with our friends & neighbors.
This sugar cookie recipe makes 3-4 dozens of assorted shape EASTER SUGAR COOKIES.
- 1 cup Butter (unsalted/softened)
- 1 cup Sugar
- 1/2 tsp Salt
- 2 Eggs
- 2 Tsp Corn Syrup
- 4tsp Vanilla
- 41/2 cups Flour
STEP 1: In a large bowl beat together butter, sugar and salt until light and fluffy.
STEP 2: Reduce speed and add eggs one at the time until well combined. Then add corn syrup and vanilla.
STEP 3: Mix in the flour and shape it into sugar cookie dough. You might need your hands.
STEP 4: Divide the sugar cookie dough into 4 equal parts.Wrap them with foil and let them chill in the fridge for minimum 1 hour.
STEP 5: Before baking preheat the oven to 350F.
STEP 6: Take the first sugar cookie dough out of the fridge. Roll it out on a floured surface to 1/4″ thickness. Using Spring or Easter cookie cutters cutout the shapes and place them onto cold cookie sheet 2″ apart.
STEP 7: Bake for 10-12 minutes or until the cookies are golden. Cool the cookies for few minutes on a cookie sheet before transferring them to wire rack.
STEP 8: Cool sugar cookies completely before decorating. You can also freeze them for couple hours to make sure the cookies won’t break while decorating.
Lemon Glaze for Sugar Cookies
- 11/2 cups Icing Sugar
- 3 Tsbp Lemon Juice (you can do any flavor you like)
STEP 1: Combine the icing sugar and lemon juice in a bowl and stir until smooth. Divide the lemon glaze into parts (depends on how many colors you will have) before adding food coloring.
