…. another gorgeous day is upon us …. I am really enjoying our sunshine ….
Yesterday was so gorgeous that we all felt like light & healthy dinner would be the perfect ending to our day!
I made a big pot of delicious Spring Vegetable Soup with Dumplings for my boys …. & I decided to make OVEN ROASTED ASPARAGUS with PARMESAN GREMOLATA for myself.
Well, the boys enjoyed their soup …. I took my Oven Roasted Asparagus out of the oven ….. put it on the kitchen island …. left the room for few minutes
to get my camera as every food blogger does …. my OVEN ROASTED ASPARAGUS with PARMESAN GREMOLATA was gone!!!
Apparently, both of my boys developed taste for ASPARAGUS right then & there.
Don’t get me wrong …. I love that my boys enjoy healthy meals, but ….. COME ON ….. I have been craving OVEN ROASTED ASPARAGUS for last 3 days since I brought it home from grocery store.
Since I had no pictures for my post ….. & no dinner …. I had to do the whole process all over again …. luckily I saved some ASPARAGUS for later.
I hope you will enjoy this OVEN ROASTED ASPARAGUS with PARMESAN GREMOLATA because I went into lot of trouble to bring it to you today ….
- 12 oz Fresh Asparagus
- 1/2 Red Onion (thinly sliced)
- 2 Cloves Garlic (thinly sliced)
- 1 Tbsp Coconut Oil (melted)
- 2 tsp Parsley (chopped)
- 1 Tbsp Parmesan Cheese (grated)
- 1 tsp Lemon Zest
- Salt & Pepper
STEP 1: Preheat oven to 425F
STEP 2: Place asparagus (without the hard bottoms) into baking dish. Top with thinly sliced red onion and garlic. Pour coconut oil all over the asparagus.
STEP 3: Roast for 10-15 minutes.
STEP 4: While the asparagus is roasting make Parmesan Gremolata – mix together parsley, lemon zest and Parmesan. Set aside.
STEP 5: Take roasted asparagus out of the oven. Place on a plate and top with Parmesan Gremolata. Season with salt and pepper if needed.
