Tomato Mozzarella & Basil Bruschetta

Are you up, yet? I am up with one eye open ….. this 2 week Spring break is really doing a number on my routine.


Don’t get me wrong ….. I LOVE spending time with my kids, but it is so hard to fit my writing in …… the cooking part is not a problem cause I am always in the kitchen feeding them …..

…. the turning recipes into the posts part is little harder when they are home.


Last few days I have been also spending some girl time with my best friend’s little girl (my daughter from another mother).


For 5 year old she is quite adventurous when it comes to food (and everything else) ….. one of her favorite dishes is BRUSCHETTA with MOZZARELLA




… so when she came over the other day we wanted to make BRUSCHETTA with MOZZARELLA & TOMATOES , but had to go to the store & buy fresh bread ….


On the drive to the store I am trying to have a conversation with my favorite sweet 5 year old ….


Me: ” So baby girl how have you been?”

BG: ” Why?”

Me: ” Just wanna know. How’s life treating you? ”

BG: ” It’s not like I am dying or anything !!!!! ”


…. yup …. she told me ….


We picked up our bread …. drove home (no more hard hitting questions) ….. made TOMATO MOZZARELLA & BASIL BRUSCHETTA …. watched a movie …..

… then I returned her ….


…. I missed her few hours later …. the stuff that comes out of her mouth is priceless.



Tomato Mozzarella & Basil Bruschetta


If you would like to make our TOMATO MOZZARELLA & BASIL BRUSCHETTA  just follow the recipe below.



  • 1o Slices of Baguette or Artisan French Bread
  • Extra Virgin Olive Oil
  • 3 Large Roma Tomatoes (chopped)
  • 2-3 Cloves of Garlic (finely chopped)
  • 1 Clove Garlic
  • 4 oz Fresh Mozzarella Pearls
  • Balsamic Vinegar
  • 1 Tbsp Fresh Basil (chopped)
  • Salt
  • Pepper


STEP 1: In a bowl mix together chopped Roma tomatoes, finely chopped garlic, chunks of Mozzarella pearls.

STEP 2: Add a splash of Balsamic vinegar and Extra Virgin Olive oil. Salt and pepper to taste. Toss in fresh chopped Basil.

STEP 3: Cover the bowl and put it in the fridge while you prepare the bread slices.

STEP 4: Brush both sides of baguette slices with Olive oil. Grill it on both sides till nice and golden brown. When still hot rub it with clove of garlic.

STEP 5: Top grilled garlic bread slices with Tomato and Mozzarella mixture and serve.
