It’s Thursday & I swear this is going to be one of the busiest Thursdays ever …. beside all my regular duties & chores …. I have ….
… 1 o’clock appointment with a lady to write an assessment about how is my family doing 14 months after Little Peanut’s accident (don’t get me started on this one)
3:30 Physiotherapy with Little Peanut …… 4 pm pick up (my bestie’s) baby girl from daycare ….. 5pm Potluck Supper at Little Peanut’s school ( and prepare a dish) ….. 6:30 Little Peanut’s baseball practice …… 7 pm high school PAC meeting ( I am a co-chair).
Last night I have been thinking what to make for the potluck …. something quick …. easy …. yet yummy & filling …… something I can
prepare night before …. something like HOMEMADE (EASTER ) STUFFING in Slovakia called Slepá kura or Stratené kura (translation – Blind Chicken or Lost Chicken).
There is so many recipes for HOMEMADE (EASTER ) STUFFING ( Slepá kura or Stratené kura) …. every family gives it their own personal taste.
Some families make it only for Easter hence the name HOMEMADE (EASTER ) STUFFING other families like mine make it any day
of the year …. cause it is that GOOD.
You don’t have to take my word for it …. try if for yourself …..
- 1 1/2lbs Lean Ground Pork
- 5 Kaiser Rolls (day old & chopped)
- 7 Eggs
- 2 Tbsp Butter
- Onion (chopped)
- 4-5 Cloves Garlic (chopped)
- 1/4 cup Fresh Parsley (chopped)
- 1/2 cup Red Roasted Pepper (chopped)
- 1 Egg (beaten)
STEP 1: Preheat oven to 375F. Grease bundt cake pan.
STEP 2: Place chopped kaiser rolls into large mixing bowl. Beat eggs with salt and pepper. Pour over kaiser rolls. Mix it through and let is sit while you prepare onion mixture.
STEP 3: In a skillet on medium heat melt butter. Add onion and saute until translucent. Add garlic and saute for few more minutes.
STEP 4: Add butter mixture, parsley and roasted red peppers into kaiser roll mixture. Mix well.
STEP 5: Add ground pork and mix again until everything is well combined.
STEP 6: Fill greased bundt cake pan with stuffing. Evenly spread beaten egg over the top. Bake for 45-50 minutes.
I made this HOMEMADE (EASTER ) STUFFING for our Easter Brunch this year for the first time and it was one of the first items to disappear from the table.
