Hello, hello ….. it’s April!
Some of you still have tons of snow & nasty cold weather ( so sorry about that), but in my neck of the woods …. sun is shining …. flowers are blooming …. birds are chirping …… & mosquitos are biting
…. better mood is everywhere you look & that means lighter & healthier dishes are being prepared cause swimsuit season is just around the corner.
Yes, we still have pizza, BUT ……. it’s homemade whole wheat thin crust ….. no sauce ….. protein & veggies.
…. one of my favorite lighter pizzas is THIN CRUST RICOTTA GARLIC & CARAMELIZED ONIONS PIZZA.
Usually I am not a big pizza fan ….. I will not eat pizza covered with pizza sauce or loaded with meat unlike my children & my hubby …. if I eat pizza it must be HOMEMADE PIZZA ….
…. instead of sauce I use only bit of olive oil & lot of fresh garlic …. I prefer thin whole wheat crust ….. & only fresh veggies ….. & cheeses.
So as you can tell THIN CRUST RICOTTA GARLIC & CARAMELIZED ONIONS PIZZA is the one for me …. right after fresh spinach with Feta (that’s for another day).

This recipe makes 6 slices of pizza.
- 1/2lbs Fresh Whole Wheat Pizza Dough (make 1lb in the breadmaker, cut it in half)
- 2 Tbsp Coconut Oil
- 2 Onions (sliced)
- 2 Cloves Garlic (minced)
- 1 tsp EVOO (Olive oil)
- 1 1/2 cup Skim Milk Ricotta
- 1 tsp Italian Parsley (chopped)
STEP 1: While pizza dough is being made in the breadmaker in a skillet heat coconut oil on medium high. Put in sliced onions. Cook for 2-3 minutes. Turn heat down to medium and let the onions caramelize for about 45 minutes while stirring occasionally. Do not let them burn & turn down the heat if it’s too hot. Onions must be soft & beautiful brown color.
STEP 2: Preheat oven to 450F.
STEP 3: Stretch pizza dough into 9″ x 14″ flat piece & place it onto cookie sheet or pizzas stone. Let it rest for 10 minutes.
STEP 4: Brush pizza dough gently with olive oil. Spread Ricotta cheese, sprinkle with minced garlic and top with caramelized onions.
STEP 5: Bake pizza for 15 minutes or until done. Take out of the oven. Sprinkle with chopped parsley and serve.
