Wonderful Monday Morning, to you all!
Yesterday was Mother’s Day & I spent a wonderful day with my boys ….. my sister ….. my nephews ….. my best friend & her baby girl ….
Yes, it was day of mommies & babies …. no dads allowed.
First, we enjoyed decadent …. delicious …. out of this world …. Mother’s Day Brunch at Delta Grand Okanagan …..
…. then we surprised the kids with an afternoon at Kangaroo Creek Farm playing with kangaroos …. wallabies…. goats ….. emu …. parrots ….
It was so much fun …. so many new memories … so many happy faces …. it was magical….
The best part of my Mother’s Day ….. Little Peanut made me a present at school, but it broke before he brought it home …..
…. immediately he called my best friend ….. asked her to buy a huge bouquet of flower …. give the bill to his daddy …. bring the flowers to the brunch so he can surprise me …..
….. I LOVE THAT CHILD!
So , since today is a bit cooler I will surprise him with batch of fresh CRANBERRY WHITE CHOCOLATE COOKIES …..
….. and after baseball practice I will take him to circus ….. cause CIRCUS is in town!
CRANBERRY WHITE CHOCOLATE COOKIES
This recipe makes about 6 dozen cookies.
- 1 cup Butter (unsalted, room temperature)
- 1/2 cup Brown Sugar
- 1 cup Sugar
- 2 tsp Vanilla Extract
- 2 tsp Baking Soda
- 1 tsp Salt
- 2 Eggs (beaten)
- 2,5 cups Flour
- 1,5 cups White Chocolate Chips
- 2 cups Cranberries
STEP 1: Preheat oven to 350F. Line cookie sheet with parchment paper.
STEP 2: In a large bowl beat together butter, sugar, brown sugar. Add vanilla extract, baking soda and salt. Mix thoroughly.
STEP 3: While mixing gradually add the beaten eggs and the flour. Incorporate it all together. Then add the chocolate chips and cranberries. Mix well.
STEP 4: Drop by teaspoons onto the cookie sheet. Bake about 12 minutes or until nice and brown.
