It’s that time of month again ….. time for Surprise Recipe Swap (SRS) ….. time to reveal my surprise foodie partner ….. & the recipe I picked to recreate.


My surprise partner today is somebody new to me ….

Gluten Free Andes Mint Brownies


Anyway, I finally settled on ANDES MINT BROWNIES …. who doesn’t love Mint Brownies, right?


I did few little changes in the recipe ….. I made my brownies Gluten Free & I also added MINT CHOCOLATE CHIPS.


So here they are  GLUTEN-FREE ANDES MINT BROWNIES  adapted from Sarah Lynn’s ANDES MINT BROWNIES.






  • 3 cups Gluten-Free Brownies Mix
  • 3/4 cup Butter (softened)
  • 1 Egg
  • 2 tsp Vanilla Extract
  • 3/4 cup Warm Water
  • 1/4 cup Mint Chocolate Chips
  • 2 bags Andes Mints

STEP 1: Preheat oven to 375F.  Line 13 x 9 inch pan with foil & spay with baking spray.

STEP 2: In a large mixing bowl beat together gluten-free brownie mix & butter. Scrape the side.

STEP 3: Beat in an egg, vanilla & warm water until combined. Fold in mint chocolate chips.

STEP 4: Chop Andes Mints & set aside.

STEP 5: Spread brownie batter in prepared pan & bake for 20-25 minutes. or until toothpick comes out clean.

STEP 5: Remove brownies from the oven. Spread chopped up Andes Mints over the top. Put back in the oven for 20 seconds.

STEP 6: After the mints are melted gently spread  them over the top with fork to make little design.

STEP 7: Cool down before cutting.

Oh, man ….. oh, man ….. these GLUTEN-FREE ANDES MINT BROWNIES were the best Gluten-Free BROWNIES I have ever tasted!

    I love that you made this gluten free. I’m always on the look out for a brownie variation. Mint is my favorite. This is my first time participating in the SRS. I hope you will come visit me too. I made the pancake and fruit kabobs ( with gluten free recipes)
