Speaking of HAPPINESS ….

Last night I made a special dessert for my boys …. to cheer them up a bit …. according to them …. HAPPINESS is whatever mom does in the kitchen.

… within few minutes the STRAWBERRY SHORTCAKE SLICE  had over 3,000 views & people asking for the recipe.

So in order  to spread HAPPINESS I got up early & decided to post it ….. just for you ….. my dear friends.

I adapted this recipe from Food Network recipe for Diner-Style Strawberry Shortcake I found way back …..

….. over the years I made this STRAWBERRY SHORTCAKE  according to the original recipe with few changes.

Yesterday ….. I had an idea ….. I turned it into STRAWBERRY SHORTCAKE SLICE

(adapted from Food Network – Diner-Style Strawberry Shortcake )

This recipe serves 8 – 10.


Cake Ingredients:

  • 1 1/2 cup Cake Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 3/4 cup Milk
  • 3 Tbsp Butter (unsalted)
  • 2 Tbsp Vanilla
  • 3 Eggs
  • 1 1/4 cup Sugar
  • 1/3 cup Strawberry Jam
  • 2 Pints Fresh Strawberries
  • 1 cup Dark Chocolate Shavings

Whipped Cream Frosting Ingredients:

  • 2 tsp Gelatin
  • 3 cups Heavy Cream
  • 1/2 cup Icing Sugar
  • 2 tsp Vanilla


STEP 1: Preheat oven to 350 degrees with a rack in the middle of the oven. Line 17.25″ x 11.5 x11″ jelly roll pan with wax paper.

STEP 2: In large bowl  sift flour, baking powder and salt together….repeat 3 times.

STEP 3: In a saucepan bring milk and butter to a boil. Remove from the heat and add vanilla extract.

STEP 4: In another bowl beat eggs and sugar until fluffy and doubled in volume. While beating slowly drizzle in hot milk mixture. Gently fold in the flour mixture.

STEP 5: Spread cake batter into Jelly roll pan and bake for 15 minutes or until golden.

STEP 6: Set the pan on cooling rack to cool.

STEP 7: When cake is completely cool cut the edges of. Then then cut the cake into 3 even strips.


Whipped Cream Frosting: 

STEP 1: In a medium bowl  mix together  gelatin and 1/4 cup of the cream. Let it rest for 5 minutes to soften  then place the bowl over barely simmering water until the gelatin has completely dissolved.

STEP 2: Remove the bowl from the heat and let cool to tepid.

STEP 3: While the gelatin is cooling down whip the rest of the cream until slightly thickened. Add the confectioner sugar and vanilla and whip to the consistency of shaving cream.

STEP 4: Gently fold 1/2 cup of the whipped cream into the gelatin mixture then fold in the rest.


To Assemble Strawberry Shortcake Slice: 

STEP 1: Wash, dry and slice the strawberries.

STEP 2: Spread 1/2 of the strawberry jam over the bottom strip of cake. Then spread  little bit of the frosting so it’s just lightly covered. Lay the sliced berries over it, then spread layer of whipped cream on top.

STEP 3: Spread the rest of the jam over second strip of cake. Place it  over the first one. Repeat as with the bottom layer then cover with top cake layer. Frost the cake with leftover whipped cream and dark chocolate shavings.

STEP 4: Decorate with fresh strawberries.
