Good morning, my dear friends!

 

I know it has been few weeks since my last post, but as much as I tried my medical issues did not allow me to work.

 

It all started few months ago when out of nowhere I woke up covered in hives & swollen eyes …. this was all new to me since I never had any issues with allergies & I never had hives ….

…. few days later I looked like Shrek ….. ever since then my doctor is trying to figure out what medication will help …..

 

Well, I am happy to tell you that the last one seems to work the best …. I am feeling great & next week I am being tested for allergies ….. finally ….. after 3 months wait.

So, since yesterday I felt best in weeks I took advantage of it & surprised my sweet boys with a NEW DESSERT …..

 

……  FROZEN BERRY YOGURT CREPES …..

I have been thinking about making FROZEN BERRY YOGURT CREPES for few weeks now …..

 

It is very simple yet elegant  DESSERT, but it does require some work & planning ahead ……

 

FROZEN BERRY YOGURT CREPES

This recipe serves 6

Ingredients:

 

Night before:

STEP1: Cook strawberries, blackberries and sugar in a saucepan on medium heat until you get soft berries with syrup.

STEP 2: Cool the berry mixture.

STEP 3: Put 4 cups of Vanilla Frozen Yogurt into large bowl and let it soften while the berries are cooling.

STEP 4: Line about 12″ plastic container with plastic wrap.

STEP 5: Mix berries and frozen  yogurt together. Pour into plastic container. Cover and put into the freezer.

Day off:

STEP 1: At least 1 hour before serving prepare CREPE BATTER.

STEP 2: When ready to serve take out the Berry Frozen Yogurt and slice it into 12 pieces. Place back into the freezer.

STEP 3: Make crepes and keep them warm.

STEP 4: Place a piece of Berry Frozen Yogurt onto each crepe and roll it like burrito.

STEP 5: When plating put two pieces of Frozen Berry Yogurt Crepes onto each plate. Top with Cool Whip and chocolate shavings.

…. and there it is ….. light …. refreshing …. impressive ….. low in fat …. DESSERT.
