Hope all of my fellow Canadians had wonderful Thanksgiving ….. & I hope the rest of you had relaxing weekend.
Our Thanksgiving was really special this year ….
…. my hubby made it home to celebrate with us ….
…. my 19 year old sweet daughter
from another mother came home from college to make us THANKSGIVING dinner.
All I had to do is to provide desserts …..
…. PUMPKIN Pie with Cool Whip ….. the usual fare
….. & something new …. PUMPKIN SPICE DONUTS with BUTTERMILK GLAZE
Few weeks ago I finally found DONUT baking pans (thank you Target) so I have been on DONUT kick ever since.
I am sure I don’t have to tell you how excited my family is about this new obsession of mine …
So for Thanksgiving I surprised them with PUMPKIN SPICE DONUTS ….
I covered half batch with CINNAMON SUGAR mix ….. the other half with BUTTERMILK GLAZE & festive sprinkles.
This recipe makes 16 donuts.
- 11/2 cup AP Flour
- 1 cup WW Flour
- 3/4 cup Brown Sugar (packed)
- 3 tsp Baking Powder
- 1 tsp Salt
- 2 tsp Pumpkin Spice
- 2 Tbsp Butter (unsalted, melted)
- 3/4 cup Buttermilk
- 2 Eggs
- 1 tsp Vanilla
- 1/2 cup Pumpkin Puree
STEP 1: Preheat oven to 325F.
STEP 2: In a bowl whisk together flour, whole wheat flour, salt, brown sugar, baking powder and pumpkin spice.
STEP 3: In another bowl beat together eggs with buttermilk. Mix in melted butter, vanilla and pumpkin puree. Mix well.
STEP4: Gently mix in flour mixture into wet mixture.
STEP 5: Grease 2 – donut pans. Fill them 3/4 with donut batter.
STEP 6: Bake for 10-12 minutes.
STEP 7: After removing donuts from the oven allow them cool for 2 minutes before turning them out of pans onto cooling rack.
STEP 8: Roll still warm donuts in cinnamon & extra fine sugar mixture.
If you prefer your PUMPKIN DONUTS with BUTTERMILK GLAZE. Allow them to cool for 5 minutes before dipping them.
- 1 cup Sugar
- 1/2 cup Buttermilk
- 1/2 cup Butter
- 1 tsp Vanilla
STEP 1: Place all the ingredients into a pan and bring to boil on medium heat.
STEP 2: Turn heat to low and let it simmer for 5 minutes.
STEP 3: Allow the glaze to cool and thicken for about 5 minutes then dip donuts in the glaze.
