Happy Wednesday, my sweet friends!
I am not even going to try to make excuses or apologies about my absence. Somehow I keep trying , but my days seem to be so short lately ….
…. on the other hand I am very busy with my new venture Bibi’s Culinary Delights ….. orders are coming in ….. gaining new customers daily …. new customers are turning into repeat customers …. life in the food lane is FABULOUS.
Lately with my hectic schedule & cooler days my family lives on quick meals such as SOUPS …. lucky for me ….. my boys love SOUPS.
I loved the idea of hearty soup with LENTILS …. TOMATOES …. SPINACH …..
….. you know me …. I just had to take the Sicilian Lentil Soup to the next level & turn it into PASTA E LENTICCHIE or LENTILS & PASTA SOUP.
Good thing I decided to make a huge pot because Hormone Boy had thirds three times a day …. true story.
Pasta e Lenticchie (Pasta & Lentils Soup)
- 2 Tbsp EVOO
- 1 Onion (chopped)
- 2-3 Carrots (chopped)
- 3-4 Cloves Garlic (minced)
- 16oz can of Chunked Tomatoes
- 1 1/2 cup Lentils (rinsed & soaked overnight)
- 4 cups Spinach (washed & coarsely chopped)
- 2L (8 cups) Vegetable Stock (can use water)
- 1 cup Dry Macaroni Pasta
STEP 1: In a large pot heat olive oil on medium heat. Add onion and carrots. Cook until onions are translucent. Add garlic and cook about 2 more minutes, stirring frequently.
STEP 2: Drain lentils. Add lentils, tomatoes, vegetable broth and spinach to the pot. Cover and simmer on low for 45 minutes.
STEP 3: Turn the heat to medium. Uncover. Add pasta and cook until pasta is cooked (not mushy) about 10 minutes.
STEP 4: Serve sprinkled with Romano cheese (optional).
There you have it ….. delicious …. quick …. easy …… PASTA E LENTICCHIE or LENTILS & PASTA SOUP.
Tip: You can make PASTA E LENTICCHIE or LENTILS & PASTA SOUP without pasta & freeze it. Just add cooked pasta when re-heating the soup.
