Wonderful Monday morning, my dear friends!

 

Many of you probably don’t know this, but I am a big COCA-COLA Collector …..

 

…. I think my addiction started many years ago when I first visited EVERYTHING COCA-COLA  in Las Vegas …. then I started shopping online at COCA-COLA STORE … I was hooked.

 

Over the years my family & friends has been helping me to build my impressive collection of COCA-COLA collectibles & memorabilia.

 

This pass Christmas my handsome Hormone Boy surprised me with COCA-COLA POPCORN MAKER …..

I was so excited to add another piece into my collection, but my Little Peanut couldn’t wait to have a movie night & made popcorn …..

 

…. December 26th …… 7pm ….. movie Santa Buddies is loaded …. COCA-COLA Popcorn Maker is plugged in & loaded with popcorn kernels according to the instruction …..

 

…. hubby turns it on …. pop … pop ….vrrrrrr …… plop …. nothing is happening ….. 2 popped kernels …. handful of burned kernels …. popcorn maker is DEAD.

 

…….DISAPPOINTMENT …… major disappointment across my kids faces …. especially Little Peanut ….

 

…. family movie night is ruined …. no popcorn …. no snack …. COCA-COLA let us down ….

Well, I couldn’t have that …. could I?

 

I grabbed my COCA-COLA Cookbook …. went to work ….. half way through the movie my family was enjoying warm …. fudgy ….. COCA-COLA BROWNIES …..

 

…. disappointment was gone ….. it was replaced with smiles ….. happiness …. and according Little Peanut the best BROWNIES ever.

 

So , you see ….. disappointment is part of life …. it makes us stronger …. better & it makes us enjoy & be grateful for the little things we otherwise would take for granted ….

 

Next time life serves you disappointment (make Coca-Cola Brownies) take the challenge & turn it into something even better. We all have been disappointed once or twice in our life …. it’s how we handle disappointment is what’s matter.

 

By the way ….. the COCA-COLA Popcorn Maker was Nostalgia Electrics product sold in Walmart.

Coca-Cola Brownies

 

COCA-COLA BROWNIES

Makes 16 servings

Ingredients for Brownies:

  • 4oz Unsweetened Chocolate Baking Squares
  • 1/2 cup Butter
  • 1 cup Sugar
  • 3/4 cup Brown Sugar (firmly packed)
  • 2 Eggs
  • 2 Tbsp Coca-Cola
  • 1 cup Flour
  • 1 tsp Vanilla Extract

STEP 1: Preheat oven to 350F. Line bottom and sides of 8″ pan with aluminum foil. Lightly grease foil.

STEP 2: Microwave chocolate and butter in a large microwave-safe bowl 1 1/2 to 2 minutes in 30 second intervals until melted. Whisk in sugars.

STEP 3: Add eggs one at the time whisking until blended. Whisk in Coca-Cola, flour and vanilla. Pout into pan.

STEP 4: Bake for 40-45 minutes. Cool completely. Cut into 16 pieces and top with Coca-Cola frosting.

 

Ingredients for Coca-Cola Frosting:

  • 1/4 cup Butter
  • 3 Tbsp Coca-Cola
  • 2 Tbsp Cocoa
  • 1 1/3 cups Icing Sugar
  • 1/2 tsp Vanilla Extract

STEP 1: Heat butter, Coca-Cola and cocoa in medium saucepan over medium-low until butter melts. Remove from heat, whisk in icing sugar and vanilla.

  11. I’m so happy I read this post for 2 reason! First those brownies look and sound amazing!! My aunt use to cook food in Dr. Pepper (Used it in a glaze) I was always so impressed she found a way to cook with soda lol I can’t wait to try your recipe
    2nd reason every time I see that popcorn maker at Bed bath and beyond I’m always so tempted to buy it. I even promised next I had the money I was grabbing it!! Now I know to say away :/ THank you for sharing <3

  12. That is a bummer that the popcorn maker didn’t work. Did you contact the company? On the other hand I love how you turned the disappointment into something fabulous. The brownies look and sound amazing. I have a friend that marinates her steak in cherry coke. Have you tried that?

      Yes, Melinda I do marinade my steaks sometimes in Coke. It makes melt in your mouth ….. I am returning the popcorn maker to Walmart :)
