Good morning, dear friends!
Spring has sprung …. well, if you ignore my frozen truck windows this morning & seeing my breath while driving little girl to “SPRING” camp.
I decided to ignore that & instead I enjoyed the few hours of sunshine when I had to take my sweater off & sport my sunglasses.
Since according to the calender (mother Nature should invest in one) there are only 2 days until SPRING I spent most of yesterday driving the male residents of my household to their appointments to shed their winter fur.
Don’t they all look handsome?
Another sign of Spring ….. fresh BERRIES are available & you don’t have to sell your firstborn to purchase them.
I was so excited when I saw gorgeousBLACKBERRIES in our supermarket that I had to take 3 baskets.
I knew the first two baskets will disappear within few minutes bringing them home, but I had special plan for my last basket of BLACKBERRIES.
….. BLACKBERRY & CREAM CHEESE CREPES …..
My kids go crazy every time I mention CREPES. They like them sweet or savory …..
…. my favorite crepes are with sweet CREAM CHEESE & fresh BERRIES
BLACKBERRY & CREAM CHEESE CREPES
Ingredients for Crepes:
- 1 cup Milk
- 1 cup Mineral Water
- 1 Egg
- 1 1/4 Flour
- 1/2 cup Sugar
- 1 Tbsp Vanilla
- 1 Tsp Baking Soda
- 1 Tsp Baking Powder
Mix all the ingredients with an electric mixer and allow the crepe batter sit overnight or for at least an hour.
Ingredients for Cream Cheese Filling:
- 4oz Cream Cheese
- 1 cup Icing Sugar
- 2 Tbsp Heavy Cream
Beat together until smooth.
Ingredients for Blackberry Filling:
- 3 cups fresh Blackberries
- 1/3 cup Organic Coconut Sugar
- 1 Tbsp Water
STEP 1: Put all ingredients into saucepan and cook on medium until sugar is melted and blackberries are little soft. It should look like blackberry compote. Let it cool.
STEP 2. While blackberry filling is cooling prepare crepes.
STEP 3. Assembly: Place crepe on a plate. Spread cream cheese filling. Then blackberry filling. Fold. Sprinkle with icing sugar and blackberries.
