Beautiful Monday morning, dear friends!
I am so excited & giddy this morning ……. one more day & one more sleep till …..
…. till I will be in the arms of my soul mate …. my best friend …. the man that loves me & respects me unconditionally for over 20 years.
Yes, tomorrow morning I am driving to the airport to pick up my hardworking man after 3 months of him driving the Ice Roads to provide for us.
The boys & I spent the weekend getting ready for daddy’s arrival ….. boys were cleaning the yard & I was cleaning the fridge among other things.
Making room for groceries to make my honey his favorite dishes while he’s home for next 14 days.
Part of the fridge & freezer cleaning is to use the leftovers & odd foods which I take on as a challenge to create new dishes.
We always have lot of eggs in a house so yesterday morning I decided to use leftover PROSCIUTTO ….. SPINACH & PARMESAN CHEESE to make PROSCIUTTO SPINACH SCRAMBLED EGGS.
I wasn’t sure how the boys would react to the SPINACH in scrambled eggs since SCRAMBLED EGGS are their least favorite eggs ….
…. to my surprise they loved it & wanted more.
PROSCIUTTO SPINACH SCRAMBLED EGGS
- 12 Eggs
- 1 Tbsp Butter
- 6 Slices of Prosciutto
- 2-3 cups fresh Spinach (washed & dried)
- 1/4 cup fresh grated Parmesan Cheese
STEP1: In a skillet melt better on medium heat. Add Prosciutto. Turn the heat to medium high and cooked until Prosciutto is nice and crispy.
STEP 2: In a bowl beat eggs with salt and pepper.
STEP 3: When Prosciutto is done turn the heat to medium low. Add eggs and cook till eggs are almost ready while stirring frequently.
STEP 4: When the eggs are just about ready stir in spinach and finish cooking.
STEP 5: Top the scrambled eggs with grated Parmesan right before serving.
I have to tell you …. PROSCIUTTO SPINACH SCRAMBLED EGGS for sure became my favorite way to make eggs.
