Good morning, fellow risk takers!


Yes, today is all about taking RISK.


I am not talking about stupidly risking your life for adrenalin rush …..


…. I am talking about taking risk in everyday life …. getting out there …. getting out of your shell….


… living life to the fullest …. be open to everything that life has to offer so you don’t miss an opportunity.


Few months ago I found myself in a life rut ….. I started feeling like a mommy robot …. I was on an auto-pilot floating through life. I stopped being adventurous in the kitchen & in my daily life.


Long story short …. I gave myself a mental slap & I promised myself that from this day forward I will


…. do something new …. something that scares me or makes me nervous … something I never tried before ….


Spicy Chicken & Corn


Yesterday …. I made SPICY CHICKEN & CORN DISH ….


You probably go like: “seriously, she took a risk with Spicy Chicken & Corn dish?”


What you don’t know is that I do not eat spicy food therefore I do not make spicy food.


I took the plunge …. I took out the spices …. I figured out the recipe …. I served it to my family & I ATE IT!


I ate it & I actually enjoyed the KICK IT UP A NOTCH CHICKEN & CORN.


So go out there today & SEIZE THE DAY …… CARPE DIEM, my friends …. CARPE DIEM!

… and after that make some SPICY CHICKEN & CORN DISH …..


Spicy Chicken & Corn with Rice

Spicy Chicken & Corn with Rice



Serves 4


  • 2 Large Chicken Breasts (skinless & boneless)
  • Oil
  • 1 Onion (sliced)
  • 2 Tbsp Soy Sauce (low Sodium)
  • 2 Tbsp Sriracha sauce
  • 2 Tbsp Ketchup
  • 1 cup Frozen Corn
  • 1 cup Ham (thinly sliced)
  • 1/2 cup Cream
  • 1 Tbsp Butter
  • Salt
  • Pepper
  • Cilantro

STEP 1: Cut the chicken breasts into thin strips.

STEP 2: In a skillet heat the oil on medium high. Saute the onions for 2 minutes and add the chicken.

STEP 3: Brown the chicken with onion. Salt and pepper. Add frozen corn, ham, ketchup,Sriracha sauce and soy sauce. Saute for another 5-6 minutes or until the chicken is done.

STEP 4: Right before the end stir in the butter and cream. Let the sauce thicken a bit. Serve over rice and sprinkle with fresh Cilantro.


Spicy Chicken & Corn


Tip: You can marinate the chicken strips in 1 Tbsp of soy sauce and 1 Tbsp of ketchup 30 minutes before cooking if you have the time.

  2. This is not a risky dish for me. My family loves cilantro and sriracha, corn, chicken and cream…. This looks like a home run!
