Last Wednesday I picked up my sweet Little Peanut from his HIP HOP Dance Class …. they were practicing their choreography to Step By Step ….
He came out of his class all excited & yelled at me across the dance studio …..
“Mom, we are dancing to Step By Step ….. it’s really, really old song …. so, You Must Know It!”
Dear child of mine …. don’t assume that ……OK, OK ….. who am I kidding except myself!!! Yes, I am Donnie Wahlberg OLD, but…..
….. I am loving my 40′s ….. I look better then I did in my 20′s ….. I feel better then I felt in my 20′s …. I am more successful then I was in my 20′s & I don’t care what anybody thinks unlike I did in my 20′s ….

Oh, I got so high on life here for a moment that I forgot to share with you my new quick & yummy go to dinner …. TEX-MEX DOUBLE BAKED STUFFED POTATOES.
What got Double Baked Stuffed Potato to do with me being old? Nothing really ….
I just served TEX-MEX DOUBLE BAKED STUFFED POTATOES it to my little darlings after the Hip Hop class last night ….
That’s how my brain works … very scary …. hip hop/being old/new kids on the block/another hip hop class/double baked potato …. new post …. you’re welcome.
TEX-MEX DOUBLE BAKED STUFFED POTATOES
Serves 4 as a meal or 8 as a side dish
- 4 Large Baked Potatoes (pre-bake potatoes or bake them in a microwave)
- 1/4 cup Fresh Chives (chopped)
- 1 cup Sour Cream
- 1 cup Thick Salsa
- 1 cup Tex-Mex Shredded Cheese Mix
- 1/4 tsp Chili Powder
STEP 1: Preheat oven to 425 degrees. Cut baked potatoes in half lengthwise. Scoop out the inside leaving about 1/4″ making sure that skin stays intact. STEP 2: Put the inside of the potatoes inside a bowl. Mix together with chives, sour cream and chili powder. Salt and pepper to taste. STEP 3: Divide the filling evenly between the 8 potato halves. Top with salsa and Tex-Mex shredded cheese. STEP 4: Place onto baking sheet and bake for 15 minutes or until the cheese is completely melted.
TEX-MEX DOUBLE BAKED STUFFED POTATOES are super quick dinner when you have pre-baked potatoes. You can also bake your potatoes the same night, but count an extra 60 minutes for baking potatoes.
Tip: If you are running late or forgot to pre-bake your potatoes just make BAKED POTATOES in a microwave.
I made couple BAKED POTATOES without salsa & I used Epicure MAPLE BACON SEA SALT instead …. it was absolutely delicious & I highly recommend it.
