Good morning, dear friends!


Today is a double special day ….. it’s not only NATIONAL PEANUT BUTTER & JELLY DAY …..


….. it’s also very important day when it comes to someone I love very deeply ….. today I am Lighting It Up Blue for my SWEET …. HILARIOUS ….. UBERSMART …. CORKY …… UNIQUE nephew Kai.

What a better way to celebrate the wonderful moments, unconditional love, laughter  & memories Kai is giving us for 11 years. then with batch of PEANUT BUTTER & JELLY RICE KRISPIES SQUARES?


Kai is very picky with what he eats (just like me), but he can never refuse anything sweet I make for him so I am sure he will love PEANUT BUTTER & JELLY RICE KRISPIES SQUARES

Peanut Butter Jelly Rice Krispies Squares



Yields 20



  • 6 cups Rice Krispies Cereal
  • 250g Marshmallows (1 small package)
  • 1/4 cup Margarine or Butter
  • 3/4 cup Smooth Peanut Butter
  • 6 Tbsp Grape Jelly

STEP 1: Follow the basic Rice Krispies Squares recipe from the Rice Krispies cereal box.

STEP 2: Using buttered spatula press half of the mixture into buttered 13×9″ pan. Keep the other half in the pan and on the warm stove so it won’t get to hard to spread.

STEP 3: Spread peanut butter on top of the bottom layer of Rice Krispies Squares, then spread grape jelly on top of it. Cover with top layer of the Rice Krispies mixture. Press down.

STEP 4: Let it cool and cut into 20 squares.

Just in case you are not a fan of Rice Krispies Squares you can celebrate with simple Vanilla Cake Roll filled with Peanut Butter & Jelly or Jam. My kids love it!
