My opinion of EASTER BRUNCH @ ARC RESTAURANT, FAIRMONT WATERFRONT in VANCOUVER

 

……. Beautiful presentation ….. FANTASTIC SERVICE ….. every dish we tried was executed to perfection or near perfection except my favorite dish EGGS BENEDICT as the English muffins were extremely hard & nobody at our table was able to cut through them with the knife we were provided.

As delicious as the food was I was very disappointed with the selection …..

This was Easter Brunch which means SPECIAL FAMILY BRUNCH no matter where you are & ARC Restaurant failed to cater to the families with children or older people with simple palettes.

Biggest let down was the absents of Waffles …. Pancakes or Crepes for the children.

Very minimal selection of Salads & Cheese …… Very disappointing Dessert Selection.

Hot station had a nice & delicious selection of main dishes …. Beef … Chicken …. Fish …. Frog Legs …

…. however there was absolutely no selection of hot side dishes especially since the Salad selection was so very limited.

 

We did enjoy our Easter Brunch at ARC (adults more then children), but I would not recommend it for families with children & people who do not enjoy lot of Seafood.

If you are a FOODIE with mature pallet you will enjoy Brunch at ARC Restaurant. I would go back for the Culinary Experience, but without my children.

Our bill for 3 adults & 2 children was almost $300.

Today is a double special day ….. it’s not only NATIONAL PEANUT BUTTER & JELLY DAY …..

 

….. it’s also very important day when it comes to someone I love very deeply ….. today I am Lighting It Up Blue for my SWEET …. HILARIOUS ….. UBERSMART …. CORKY …… UNIQUE nephew Kai.

What a better way to celebrate the wonderful moments, unconditional love, laughter  & memories Kai is giving us for 11 years. then with batch of PEANUT BUTTER & JELLY RICE KRISPIES SQUARES?

 

Kai is very picky with what he eats (just like me), but he can never refuse anything sweet I make for him so I am sure he will love PEANUT BUTTER & JELLY RICE KRISPIES SQUARES

PEANUT BUTTER & JELLY RICE KRISPIES SQUARES

Yields 20

 

Ingredients:

  • 6 cups Rice Krispies Cereal
  • 250g Marshmallows (1 small package)
  • 1/4 cup Margarine or Butter
  • 3/4 cup Smooth Peanut Butter
  • 6 Tbsp Grape Jelly

STEP 1: Follow the basic Rice Krispies Squares recipe from the Rice Krispies cereal box.

STEP 2: Using buttered spatula press half of the mixture into buttered 13×9″ pan. Keep the other half in the pan and on the warm stove so it won’t get to hard to spread.

STEP 3: Spread peanut butter on top of the bottom layer of Rice Krispies Squares, then spread grape jelly on top of it. Cover with top layer of the Rice Krispies mixture. Press down.

STEP 4: Let it cool and cut into 20 squares.

Just in case you are not a fan of Rice Krispies Squares you can celebrate with simple Vanilla Cake Roll filled with Peanut Butter & Jelly or Jam. My kids love it!

Wonderful Wednesday Morning, my sweet friends!

 

Isn’t it glorious to be alive?

 

Sun is shining ….. my hubby is finally home …. boys are excited …. everything is good in the world again.

 

Yesterday morning Little Peanut & I got up early & drove to the airport in Kelowna to pick up my handsome hubby.

 

Since it was 9am when hubby arrived breakfast was in order before the drive back home ….

 

We usually have few regular places we visit when in Kelowna, but this time we decided to go for Dutch Breakfast & stop at De Dutch Pannekoek House.

Over the years I heard many conflicting reviews so I never really had the need to see for myself, but Little Peanut wanted PANCAKES.

 

Long story short ….. the pancake arrived …. the whole 12 inches of it …. Little Peanut got so excited …. & yes, he ate it all ….. that’s my child.

By the time we came home hubby was exhausted & he spent most of the day dozing off on the sofa which gave me time to make him delicious home cooked meal & of course a dessert …..CHOCOLATE MINT CAKE ROLL .

 

I made this CHOCOLATE MINT CAKE ROLL few weeks ago for St.Patrick’s Day & since my hubby loves CHOCOLATE & MINT I knew this would be a real treat for him.

 

This CHOCOLATE MINT CAKE ROLL was inspired & adapted from Mint Chip Cake Roll from Dorothy at Crazy For Crust.

CHOCOLATE MINT CAKE ROLL

Yield: 12 Slices

 

Ingredients:

 

For the Cake:

  • 3 eggs
  • 2 tsp brewed coffee (or water)
  • 1 tsp Mint extract
  • 1/4 cup cocoa powder
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 3/4 cup AP flour

For the Filling:

  • 1 cup heavy whipping cream
  • 4 Tbsp powdered sugar
  • 1/2 tsp Mint extract
  • 6 drops green food coloring
  • 4 oz white chocolate

 

STEP 1: Preheat oven to 350°F. Line a jelly roll (10×15”) pan with foil or wax paper and spray with cooking spray.

STEP 2: In a bowl beat eggs at high speed for 3 minutes. Beat in sugar, coffee and mint extract.

STEP 3: In another bowl whisk together cocoa powder, flour, baking soda and salt. Stir into wet ingredients just until blended.

STEP 4: Spread evenly into prepared pan.

STEP 5: Bake for 9-11 minute.

STEP 6: While the cake is baking set a clean kitchen towel out on a large work surface. Sprinkle liberally with powdered sugar. As soon as the cake comes out of the oven turn it onto kitchen towel. Remove foil or wax paper.

STEP 7: Working from the short end roll the cake into the towel tightly. Let it cool completely.

 
Prepare Filling:

STEP 1: In a small microwavable bowl slowly melt white chocolate. Set it aside to cool.

STEP 2: In a large bowl beat whipping cream with electric mixer while slowly adding powdered sugar until you have almost perfect form. Beat in melted chocolate, mint extract and green coloring.

 
Assemble Cake:

STEP 1: Unroll the cake. Spread the filling leaving 1″ from each end. Leave some filling to frost the cake. Re-roll the cake.

STEP 2: Frost the cake with think layer of leftover filling. Cover with chocolate sprinkles. Allow it to cool for at least an hour in the fridge before serving.

My Baby’s Coming Home Prosciutto Spinach Scrambled Eggs

Beautiful Monday morning, dear friends!

 

I am so excited & giddy this morning ……. one more day & one more sleep till …..

 

…. till I will be in the arms of my soul mate …. my best friend …. the man that loves me & respects me unconditionally for over 20 years.

 

Yes, tomorrow morning I am driving to the airport to pick up my hardworking man after 3 months of him driving the Ice Roads to provide for us.

 

The boys & I spent the weekend getting ready for daddy’s arrival ….. boys were cleaning the yard & I was cleaning the fridge among other things.

 

Making room for groceries to make my honey his favorite dishes while he’s home for next 14 days.

 

PROSCIUTTO SPINACH SCRAMBLED EGGS

Part of the fridge & freezer cleaning is to use the leftovers & odd foods which I take on as a challenge to create new dishes.

 

We always have lot of eggs in a house so yesterday morning I decided to use leftover PROSCIUTTO ….. SPINACH  & PARMESAN CHEESE to make PROSCIUTTO SPINACH SCRAMBLED EGGS.

 

I wasn’t sure how the boys would react to the SPINACH in scrambled eggs since SCRAMBLED EGGS are their least favorite eggs ….

 

…. to my surprise they loved it & wanted more.

 

PROSCIUTTO SPINACH SCRAMBLED EGGS

 

PROSCIUTTO SPINACH SCRAMBLED EGGS

Serves 4

Ingredients:

  • 12 Eggs
  • 1 Tbsp Butter
  • 6 Slices of Prosciutto
  • 2-3 cups fresh Spinach (washed & dried)
  • 1/4 cup fresh grated Parmesan Cheese
  • Salt
  • Pepper

STEP1: In a skillet melt better on medium heat. Add Prosciutto. Turn the heat to medium high and cooked until Prosciutto is nice and crispy.

STEP 2: In a bowl beat eggs with salt and pepper.

STEP 3: When Prosciutto is done turn the heat to medium low. Add eggs and cook till eggs are almost ready while stirring frequently.

STEP 4: When the eggs are just about ready stir in spinach and finish cooking.

STEP 5: Top the scrambled eggs with grated Parmesan right before serving.

 

I have to tell you …. PROSCIUTTO SPINACH SCRAMBLED EGGS for sure became my favorite way to make eggs.
